天丼 Tempura Bowl

●Ingredients(4 servings)

Rice 2 cups 360g
8 shrimp in shells without heads
4 fresh shiitake mashrooms
4 shiso green leaves

●Tempura Sauce

Dashi(Basic stock) 120cc
3 Tbsp Mirin
3 Tbsp soy sauce

●Batter

1 egg
water 120cc
flour 50g
cornstarch 30g
flour
oil for deep-frying

●Directions

1 Cook rice.
2.Devein shrimp and shells,leaving tails.
Cut off the tip of tails and force out any
moisture with the back of knife. Score underside
of shrimp at several places to flatten.
3. Trim stems from shiitake mashrooms and shiso leaves.
4. Place tempura sauce ingredients in a pan and bring
to a boil.
5. To make batter, combine eggs and water in a bowl,
add flour combined with cornstarch and mix lightly.
6. Preheat oil to 350F. Dust shrimp, shiitake and shiso
leaves lightly with flour, coat with batter and deep-fry.
7.Transfer tempura onto hot rice in bowls, and pour sauce
over.
