Oyakodonburi 親子丼 Chicken and Egg on Rice

●Ingredients(4 servings)

Rice 2 cups 360g
Chicken thigh 400g
Onion 1/2
2 scallions

●Sauce

Dashi(basic stock) 500cc
3 Tbsp sugar
3 Tbsp Mirin
4 Tbsp Soy sauce
4 Tbsp light soy sauce

1. Cook rice.
2. Cut chicken into 3/4-inch cubes.
Cut onion into thin slices and chop scallions diagonally.
3. Place all sauce ingredients in a pan, bring to a boil,
add chicken and boil briefly.
4. Prepare toppings individually.
Place 1/4 of the sauce, chicken and vegetables in a small pot.
and bring to a boil. Beat 2 eggs, pour over in circular motion
and cook until egg is half done, stirring and moving the pot.
5. Place a portion of hot rice in a bowl. and slide chicken
and egg topping carefully over rice.
