おでん Oden Stew
●Ingredients(4 servings)
4 octopus tentacles boiled 400g
4 slices Daikon Radish
8 taros
1 cake Konnnyaku Yam cake
2 cake thick deep-fried tofu(atsuage)
4 burdock fish cake rolls
●Stock
Dashi 2000cc
6 Tbsp Sake
3 Tbsp sugar
5 Tbsp Mirin
5 Tbsp light soy sauce
5 Tbsp soy sauce
dried shrimp 30g
●Condiments
Rinsed scallions
Chopped yuzu citron rind
Chili pepper flakes
Yellow Mustard
◆Directions
1. Cut octopus tentacles in half lengthwise.
2. Peel daikon radish and taro, and boil until tender.
3. Rub Konnnyaku with salt, parboil briefly, cut across
the surface, making diagonal slits, and cut the cake into
8 pieces.
4. Douse deep-fried tofu and burdock fishcake rolls with
boiling water to remove excess oil. Cut tofu in half.
5. Place all ingredients and stock in a pot, and cook over
low heat for 2-3 hours.
6.Serve with mustard and condiments to taste.
